| Chef Francois Roldan  Francois discovered his culinary passion from a young age growing up in the South West of France. Cooking was always a large part of family life and he quickly discovered his natural ability for transforming basic ingredients into hearty dishes. Francois decided to transform his passion into a career and focussed on turning his dream of being a chef into a reality.
Having mastered the local ‘Art de Vivre’ cuisine of Toulouse, Francois moved to the French Riviera where he spent several years broadening his culinary skills. His first position was in London, under the watchful eye of Monsieur Pascal Assignac who encouraged Francois to further explore the art of French cuisine and adapt it for an international audience.
At restaurant Club Gascom, Francois had a flare for combining his home town cuisine with a modern twist and international flavour. Francois then returned home to France, working in the 2 Star Michelin Restaurant, Amphytion, located in the heart of Toulouse.
His experience across Europe taught Francois that he excelled working abroad, dabbling with different ingredients to reflect various cultures and impressions. New influences have always had a positive impact, allowing him to discover new culinary expertise, eventually leading him to a luxury 5-star Resort in Dubai.
With several years of experience within the top gastronomic establishments here in Dubai and working with a range of different cuisines, he again found a place that allowed him to tell people the story of ‘art de vivre’, a place which offers French traditions with an international twist.
